CHIA PUDDING WITH ORANGE ZEST AND PLUM COMPOTE

INGREDIENTS (SERVES 2):

4 tablespoons chia seeds
zest of ½ orange
1 cup or 250 ml YOSOY 0% Oat drink
5 plums
3 Medjool dates
½ teaspoon cardamom powder
juice of ½ orange
pinch of salt

PREPARATION (STEP BY STEP)

1. Put the chia seeds in a bowl and add the zest of ½ orange and mix. Add the YOSOY 0% Oat Drink and mix until you have a pudding texture. Leave to stand for 10-15 minutes.

2. Meanwhile, in a saucepan, put the chopped plums without the stone with the pitted and chopped Medjool dates. Add the ground cardamom, the orange juice and the pinch of salt.

3. Over medium heat, cook for about 5-6 minutes, until the plums and dates break down a little. Lower the heat, cover and cook for a further 5 minutes. Add a little water if necessary. Taste and adjust to taste. You can leave it like this or grind it.

4. In a bowl, serve some chia pudding with the plum compote. You can add some hemp seeds as a topping.
