PREPARATION (STEP BY STEP)

To make the recipe for vegan torrijas, the Spanish version of French toast, just follow these easy instructions. We recommend using bread from the day before or a special bread for torrijas to make them super fluffy. You can serve them at room temperature or cold – they’ll be even better tomorrow!

1. Cut the loaf of bread into thick slices.

2. Put 400 ml of oat drink with the cinnamon stick and the peel of half a lemon in a saucepan and bring to the boil.

3. Just as it comes to the boil, turn off the heat and leave to cool.

4. Remove the cinnamon and lemon from the drink and soak the slices of bread for a few seconds.

5. Set aside on a plate.

6. In a bowl, beat the banana with two tablespoons of lemon juice, add 50 ml of oat drink and a teaspoon of cinnamon powder and mix well.

7. Place a non-stick frying pan with a little oil on a low heat.

8. Dip the slices in the banana mixture and fry on both sides.

9. Sprinkle with a little cinnamon before serving.

10. Serve with maple syrup.
